Darragh Stakelum also starred for Tom Kingston's outfit, registering 1-3 as UCC earned an important win.
Liam Collins netted two late goals for University of Galway, but UCC prevailed.
Shane O'Brien's first half goal was the decisive score as Mary I enjoyed a 1-16 to 0-17 away win over SETU Waterford.
UL were involved in another high scoring encounter proving too strong for a spirited ATU Galway team, 3-27 to 3-16.
Paddy O'Donovan, Aidan O'Connor, and Jack Leahy netted UL's goals.
